HOW DO YOU USE LEMONGRASS?

Lemongrass contains many benefits for people. The leaves and the oil it produces are used in medicines which treat a variety of illnesses and conditions, such as digestive tract spasms, stomach ache and vomiting, along with high blood pressure and painful joints. It is also a potent antibacterial.

You can also use it in cooking. In fact, many south-east Asian dishes use lemongrass for its mild lemony flavour. However, only the tender bottom part at the base of the leaf is used.

And, of course, it makes a delicious, refreshing and healthy tea.

WHAT IS LEMONGRASS?

Lemongrass is a tropical grass found in Australia, Asia and Africa. It can grow to about 2 metres tall. It has long, slim green leaves with a magenta-coloured base.

HOW DO YOU COOK WITH LEMONGRASS?

You can use the tender part of the lemongrass stalk either whole, sliced, or ground into a paste (with a mortar and pestle).

Slice off the dried tops and bottoms, and any dried outer layers.

Crush the stalks slightly to release the oils and the cook as per your recipe.

HOW DO YOU MAKE LEMONGRASS TEA?

When it comes to making lemongrass tea, feel free to use the whole leaf, base and stalk. There is actually more flavour in the leaf.

You only need one whole leaf to make a nice cuppa. This leaf can be placed in a pot of water whole, or you can snip it into the pot with scissors. Add 2 to 3 cups of water and then bring it to the boil.

Leave it to boil for approximately 15 minutes – enjoying the refreshing lemony aroma – before switching off.

Pour into cups and drink. You shouldn’t need to add anything in order to enjoy this herbal tea.

WHAT’S THE BEST WAY TO STORE LEMONGRASS?

You can store lemongrass in the fridge or freezer. Wrap the untrimmed stalks in cling wrap and store in the fridge for up to 2 weeks. Or wrap trimmed stalks in cling wrap and seal in a Ziploc bag to store in the freezer for up to 3 months. Or make a paste, put into ice cube trays and freeze. Use unthawed.

I'd never heard of lemongrass tea until I saw it on the Black Leaves website. I thought it might be a nice tea to try as I did suffer from heartburn. I'm happy to report that the heartburn is gone, and so is about 2 kilos. Not sure if the two are connected, but you won't hear me complain

I bought it for the taste, but have noticed the occasional arthritis I get in my ring finger has cleared up. Thanks lemongrass
